Even though I love baking, I didn’t do any holiday baking this year, because there just wasn’t time! Now that the season of festivity is over, though, I’ve got a quiet afternoon to bake up a batch of hot chocolate cookies. My recipe is based on the Swiss Miss recipe (although I double the chocolate chips, because why not) and yes, the classy secret ingredient is hot chocolate mix packets. The cookies come out moist, chewy, and super-sweet perfect as cookie gifts on holidays. Make some for your January book club, your office potluck, or your weekend of cozy reading!
Hot Chocolate Cookies
Ingredients
2 sticks room temperature butter
1 cup sugar
2/3 cup brown sugar
2 eggs
1 teaspoon vanilla
3 1/4 cups flour
4 packages hot chocolate mix (not sugar-free)
1 teaspoon salt
1 1/4 teaspoon baking soda
1 cup each milk and semi-sweet chocolate chips
1 cup mini-marshmallows (if desired)
Instructions
Cream together both sugars and the butter until light and fluffy.
In another bowl, whisk together the dry ingredients. Mix in the eggs and vanilla. Slowly add in the dry ingredients in stages, scraping the bowl each time.
Add the chocolate chips to the cookie dough. Chill the dough for an hour.
Drop onto a parchment-lined cookie sheet. Bake them in a preheated 350 degree oven for 9 to 11 minutes. Let cool for 5 minutes before removing from the pan.
